  1. Preparation and handling of materials for growing enoki mushrooms

Similar to many other types of mushrooms such as straw mushrooms, termites, mushrooms, … to grow enoki mushrooms at home, you also need to prepare and handle the necessary ingredients.

The most commonly used materials for growing enoki mushrooms are bagasse, coir, coconut chips, sawdust of non-essential wood trees. Even taking advantage of new, unmolested coffee grounds is also very suitable for growing enoki mushrooms.

You can refer to some ways to mix ingredients for growing enoki mushrooms as follows:

  • Mix the ingredients of sawdust, rice bran at the rate of 77% – 20% with 1% gypsum powder, 1% sugar, 1% superphosphate and purified water until the moisture level is maintained from 60 – 70%, the pH is 6.5
  • Mix the ingredients of chopped straw, rice bran at the rate of 72% – 20% with 5% corn flour, 1% gypsum powder, 1% sugar, 1% superphosphate, purified water and the same pH as method 1.
  • Note: chopped sawdust or straw must be composted for about 3-6 months before it can be used to grow enoki mushrooms.

After the ingredients have been mixed, you continue to close the embryo sacs to grow mushrooms according to the principle:

  • The weight of each embryo bag is about 0.4 – 0.5kg, use your hand or a compactor, remember to leave a space of about 20cm for the mushroom stalk to grow.
  • Flatten the surface, dig a hole in the top to plant the mushroom seed
  • Use a cotton ball to stuff it into the mouth of the bag and then use the nylon layer to fasten it into a button

  1. Embryo sac pasteurization

The technique of autoclave sterilization is similar to that of other types of embryo sacs growing mushrooms in order to destroy harmful microorganisms. In this step, you will perform the following steps:

  • Place the embryo bags on the steaming shelf, do not stack them on top of each other
  • Steam in a water bath at a temperature of 100 degrees Celsius for 6-8 hours
  • Wait for the embryo sac to be about 25 degrees Celsius, then put it in the incubator

  1. Carrying out the implantation of the needle fungus in the embryo sac

The procedure for inoculating the needle fungus seed into the sterilized embryo sacs takes place as follows:

  • Preparing inoculation tools including seed bottles, clamps, alcohol lamps, etc., all need to be disinfected before being put into the inoculation room.
  • The breeding room needs to be airtight and disinfected, ensuring hygiene
  • Carry out inoculation by using a clamp to gently poke the seed from the seed bottle into the embryo sac, the implantation position is the hole that has been made in the surface of the embryo sac before.
  • After transplanting, put a cotton button on the neck of the embryo sac and take it to the incubator
  • Each seed bottle can usually implant 30-40 embryo sacs
  • It is recommended to choose seed bottles that have white mycelium to the bottom, production time is less than 2 months

  1. Care and harvest

Some necessary conditions of the mushroom incubator are required to maintain the growth and development of enoki mushrooms:

  • Humidity from 80% to 90%
  • Temperature conditions from 20 – 23 degrees Celsius, ventilation
  • When the fungus forms too much, the temperature needs to be below 13 degrees Celsius and not higher than 16 degrees Celsius, the air humidity only needs to be at 80% – 85%.
  • No need for light, keep the room dark, absolutely avoid direct sunlight
  • Should be cleaned, sprayed with insecticide, sprinkled with lime to disinfect the incubator before putting the embryos in

Carrying out the incubation period of mushrooms:

  • Put the mushroom embryos on the shelf
  • 15-20 days after the mushroom forms the fruit body, open the mouth of the bag
  • Do not water directly into the embryo sac, only water around and the floor
  • Maintain proper air humidity and temperature
  • Mushroom stalks about 15cm long can be harvested for the first time
  • After harvesting, the bag of mushrooms should be pulled up to about 2cm above the surface of the environment, the appropriate temperature is still required to be 13 degrees Celsius, after only 3-4 days the mushrooms will form the second fruit body.
  • When harvesting, it is recommended to use a knife to cut close to the root, wash and use immediately in meals to keep the fresh and sweet taste
