How to make super crispy almond tile cake
- Level: Easiest of the cookies.
- 90 grams almond slices.
- 2 egg whites.
- 65 grams of sugar (can be customized to your liking).
- ½ teaspoon vanilla (about 3ml).
- a little bit of salt.
- 20 grams of flour.
- 30 grams of melted unsalted butter.
Steps to take
First, turn on the oven at 130 degrees Celsius.
Then place the sliced almonds on a tray and dry for about 7 minutes until you can smell the aroma of the almonds, but don’t let the almonds burn. Then take it out and let it cool.
(You can skip this way, but I usually do it to make the macaroons smell better)
After drying the almonds, leave the oven at 170 degrees Celsius with 2 fire mode.
Place unsalted butter in a bowl, then microwave until melted (takes about 30 seconds), then let cool.
Place the egg whites and sugar in a bowl, then use a hand whisk to beat until the sugar dissolves and creates a light fluffy mixture.
(Be very careful with the bowl that is dry, not sticky at all, and the egg whites don’t stick to any of the yolks!)
Add the flour to the mixture in step 2, then add a little salt, vanilla and mix well.
Add the melted and cooled butter in step 2 and the almonds to the mix above. Use a spatula or spatula to mix well.
(The mixture after mixing will be a bit loose, guys, but it doesn’t flow like water!)
Next, prepare the baking tray. On a baking tray lined with parchment paper or a silicone sheet for baking.
There are 2 things you need to pay attention to in the baking preparation step:

- You can spray a layer of cooking oil, or brush butter on parchment paper to make it easier to take out the cake, save time trying to get the cake out).
Scoop about 1 teaspoon of flour, then use the back of the spoon to spread the mixture out in a thin circle. (Tie cake should not be too thick, about 1mm is a good standard, so the cake is cooked quickly but also crispy!)
Then put the cake into the oven, bake at a temperature of 165 – 170 degrees C for about 10 – 12 minutes, until the cake is golden, the outside edge of the cake is slightly dark brown.
If you want to create a curved shape for the cake, take the cake quickly so that when the cake is still hot, it will shape the cake! When it’s cooled down, give up.
The fastest way to shape the almond tile is after taking it out, while the cake is still hot, immediately place the cake in a Baguette mold or you can place it in any curved shape such as a glass of water. Wait for the cake to cool then take it out. (When taking out the cake, remember to take it out so that it doesn’t break!)

Some small notes to keep the almond cake always delicious
The almond cookie dough is a bit more liquid than the others, but not to the point of melting on the paper. If you make the dough too loose, the easiest fix is to put it in the fridge for about 30 minutes, then the dough will thicken.
Oven temperature may vary depending on the oven of each family. With small ovens, the heat will be transferred to the cake faster, so it is important to note that the temperature is lower than the temperature recorded in the recipe above! You should have a first try with about 3-5 cakes to adjust the oven temperature appropriately.
The secret to uneven ovens (like mine) T_T, after 5 minutes, please open the oven and turn the tray upside down to cook evenly.
At the almond cake it is very thin, so you should pay attention to the cake soup at the last minute to avoid the case of the cake being burnt. And the feature of this cake is that it’s better to bake it a little bit too hot than to not bake it (but don’t burn the cake. It sounds complicated, but once you do it a few times, you will master it and get used to it. Me too ). Because the cake is not cooked enough, the cake will be tough and quick, no longer crispy.
After taking out the almond tile cake, it will be very soft and then harden when it cools, so take advantage of the curved shape for the cake to your liking as quickly as possible! If unfortunately the cake is hard, fix it by putting it in the oven for 1-2 minutes, it will soften. But this is unlucky, best hurry up guys.
How is it preserved?
Tuiles Almond in particular or all cookies in general have a certain crunch time. Almond cake is best used when the cake is freshly made, the longer it is left, the more crispy it will be, and the faster it will go stale. Don’t wait more than 3 days!
Store the cake in an airtight container with a tight-fitting lid. Just keep it at normal temperature.
